In Puglia, there is a great tradition for the conservation of vegetables in oil, putting together two treasures of our agriculture.
When the tomato was seasonal, and did not come from greenhouses or from all other corners of the world, the best way to preserve the taste was to choose the more pulpy ones, cut them in the direction of the length, and covered by a very thin veil to protect them from dust and insects, leave them to dry in the sun for a few days, until they had not lost their moisture content.
At this point, the tomato was ready to be flavoured with garlic, parsley, a hint of chilli and capers. And finally everything was submerged by our best extra virgin olive oil.
This taste of the past you will find, untouched in our packs of dried tomatoes in olive oil, excellent to be served as a side dish, or on bruschetta. We prepare it exactly as we were taught by our grandmothers, ensuring that the ingredients are all Italian, and which are made up under the most rigorous hygiene and health inspection. But these are details. What really matters, you will verify by tasting them. Within our jars is not only delicious food. There is the taste of summer!

The Cooperative Agricultural Progress is located in Terlizzi (Bari), little town at about 30 km from Bari, renowned in Italy and Europe for the cultivation and production of plants and flowers. One of the typical characteristics of the city is the production of Extra Virgin Olive Oil; in fact, 60% of the national total is produced in our area where, thanks to the production of two famous varieties, Coratinae and the Ogliarola Bari, the oil produced is really the existing TOP in Italy.
The cooperative besides producing Extra Virgin Olive Oil 100% Italian track, also comply with the specification PDO, increasingly over the years has increased its investment in the production of Organic Extra Virgin Olive Oil.
The Cooperative Agriculture Progress also produces figs, rosettes, cherries and apricots very good quality.
