The peasant oil-packed artichokes, also known as Apulian way artichokes, is one of the most famous preserves in southern Italy. That’s why Italy is the world's largest producer of artichokes. A dish ready for every occasion; it’s genuine, light and top quality food. Ideal as an appetizer, perfect for accompanying a second dish, farmer artichokes are really delicious even as seasoning on bread and bruschette or to flavor green salads, rice and cold pastries.

The artichokes used for the preparation of the recipe come exclusively from cultivations in the Salento’s fields. To keep the typical taste and crunchiness of the product, artichokes are harvested and processed only at the time of their perfect ripening. Prepared according to the original peasant recipe, artichokes are tender and tastefully sweet. Once collected from the fields, the artichokes are cooked and seasoned with garlic, pepper, laurel, vinegar and extra virgin olive oil. The ingredients are all natural, highly selected and subjected to rigid security controls.

Peasant Artichokes, if stored in a cool, dry place away from direct sources of heat or moisture, may last up to one year. Once the jar is opened, it is highly recommended to pour oil so that the artichokes will always be immersed in it and can be preserved at their best, continually renewing their typical flavor.
