The artichokes shank in oil are made by choosing from the Apulian countryside only tender and crunchy artichokes. After being processed, through accurate and careful cleaning, the artichokes are 'cooked' with vinegar and subsequently stored in extra-virgin olive oil.
The artichokes shank are a real delicacy of the lands of Puglia, where, after being cultivated, they are rigorously hand-worked from the fresh, that is not from the semi-finished, to maintain authentic aromas and flavors.
If the artichoke's heart is useful for the liver and favors diuresis, the stalks of the artichoke are not less important, as well as having a delicate taste, they have important detoxifying and purifying properties.

Once the package has been opened, the artichokes must be kept in the refrigerator and must always be covered with oil. Check the level every two days and add more oil if necessary. Keep in a cool and dry place, away from sources of heat, direct light and humidity.
