In order to be marketed under this heading, olive oil must comply with minimum quality standards : it must be obtained by extraction only with cold mechanical methods, ie with controlled temperatures less than 28 degrees and its acidity should not exceed 0.8%.

Without a doubt, extra virgin is the best type of olive oil. It is often referred to as "perfect", as it is absolutely forbidden for it to be added or mixed oils of other origin.

Extra virgin olive oil lends itself to perfection frying and preserving other products in oil. Its nutritional properties, compared with those of other seasoning fats, are decidedly better.

Extra virgin olive oil is a fundamental food of the Mediterranean diet and is also considered an excellent element for the treatment and prevention of certain diseases.
