For preserves we mean preparations cooked with sugar, salt, vinegar and oil. These ingredients are used for the preservation of fruit, vegetables, meats and cheeses .

The birth of canned food can be traced back to the satisfaction of a specific need: to have the possibility to consume products even out of season.

Among the forerunners of this technique, we find, without a shadow of doubt, the housewives , which in ancient times began the process of preserving vegetables to be consumed in the future, when nature did not allow collect them. Also the industrial evolution has contributed to the affirmation of the preserves, in this case thanks to the mass production of tomato preserves , in the form of pureed, peeled tomatoes and the like.

The fruit preserves , however, are later than this period. The type of preserves ( Jam, compote, jelly, preserves ) is determined more by the percentage of fruit contained. The main ingredients of this type of preserves are, of course, fruit and sugar.
