Vincotto

 

It is one of the must-haves of Puglia, one of the best known products on the food market: the figs vincotto, which is obtained by boiling the ripe figs in slow-fire copper boilers.

Produced and packaged by the Cooperativa Agricoltura Progresso, it is characterized by an unmistakable sweetness on the palate, accompanied by a dense and honeyed consistency (density is an indication of high quality of the product): it is essential for the typical Pugliese Christmas sweets (as cartellate , susamielli, calzoncelli, etc.), but is able to generate a particular taste when used with cheese for lunch or dinner.

Really unique and delicious, produced according to the typical traditional recipe of Puglia, the figs vincotto is also indicated to create contrasts of flavor with cooked or boiled meat, or in combination with freshwater fish, or, finally, for prepare some very special vegetable soups. Even today, in some cases, it is used as an antioxidant sedative for cough treatment.

The fig vincotto of the Cooperativa Agricoltura Progresso is free of artificial preservatives.
